Dalton - Family Collection Shiraz (vormals Reserve Shiraz) Dalton Winery The wine ages for 18The vineyards: The grapes for the Reserve Shiraz come from vineyards at an altitude of 750 meters in Kerem Ben Zimra. Wine Production: Due to the proximity of the vineyards to the winery, grapes were transported to the winery within minutes of harvest. The fermentation lasted 10 days, after fermentation the wine was transferred to new French oak barrels in which it was allowed to mature for approximately 14 months. It was then blended with 5%
